Knokke-Heist is a Dutch-speaking municipality in West Flanders. The West Flemish dialect is the most distinctive of the Belgian dialects — rapid speech, closed vowels, and a melody that can be hard to follow even for Dutch speakers from elsewhere. In hotels and restaurants, English and French are always welcome. At the beach club, the bakery and the ice cream shop, any Dutch is genuinely appreciated. The key word for everything good in Knokke: "lekker" (delicious, lovely, pleasant — used for food, weather, places and situations).

Is the water cold today? The North Sea at Knokke averages 17–19°C in August — brisk but swimmable. A Belgian will say "niet te koud" (not too cold), which means quite cold. Go in anyway.

Do you have a table for two? In July–August at the better Knokke restaurants, always book ahead. At La Reserve, book weeks in advance. At Rubens, at least a few days. Walk-ins possible at lunch; dinner without reservation is risky in summer.
